The ‘Harnett’ is made with Jersey milk from the Laugesen farm. A French inspired cheese often discussed as New Zealand’s ‘Epoisse’!
Made by hand in the heart of Kaikoura. The Harnett’s are wiped with a light brine solution every second day to gain influence from the Local flora to create a unique local flavour. We let the seasons influence the character of the cheese gaining a lovely buttery texture in spring through to Autumn. Popcorn and Cauliflower at the height of summer and a Bacon/shed flavor towards the end of lactation.
The cheese is also influenced by its age. At three weeks the cheese is mild with a lovely heart adding depth to the texture. At six weeks the cheese starts to ooze and all the flavor strengthens for a dramatic climax. A creamy texture, a complete body will match what is available locally. Match with in-season fruits such as peaches or strawberries, nuts, breads and honeys.
In 2017 The Tenara was entered into the New Zealand Cheese Awards where it scored 98.5/100, winning its class category.
Tenara - 'a warm greeting or welcoming'. Also named after a small conical shaped mountain near to Kaikoura.
Tenara is our soft ash coated goat cheese weighing in between 230/280 grams depending on the season. At 14 days old the Tenara develops a predominantly Geotrichum rind (toad skin) with an interesting flurry of native flora. The Tenara has a soft fudgy interior with incredibly subtle flavours of walnut and cinnamon. The Tenara intensifies over maturation and has been aged for up to 150 days.
Incredible with asparagus, beetroot, venison, lamb, honey, figs, blueberries to name a few.
Main Season - between August and April.
The Love&Fury is a fine Jersey cow cheese, worth the taste.
Born from the chaos of the Kaikoura earthquake, Love & Fury breaks all the rules. Sour and sweet with a hint of bitterness in the wild rind, and a creamy rich interior. Matured over 14 days for a young clean flavour, or wait over thirty days for the Fury to take more of a hold.

The Laugesen is a semi-hard Jersey cow cheese that has an earthy flavour and a crusty rind with some spent grain embedded which adds to the taste.
Baby Candy Goddess - A mistake or an experiment which came up spades. A goat's milk cheese that has been matured and washed in molasses (or beer as we prefer to say) giving the cheese this new twist on the old incredibly interesting candy profile.
This is a goat’s cheese with a very mild in flavour. Much loved by my son who is not a fan of strong cheeses.

Serving suggestions: This cheese is best eaten with your lover or good friends, if they’re not available try candied orange peel or ginger. Try the saffron with an apricot, put the Mediterranean herb on top of a steak or mix the lemon into a salad. Chili works wonders with dark chocolate. Wine,beer or whisky say no more!!
